Casa da Passarella
We recovered a technique that has always been used at Casa da Passarella in the production of white wines, although it is a method usually used for red wines.
Tanning consists of skin contact during the fermentation process, and we chose for this to take place in a cement vat.
This technique produces wines with enormous character, personality and differentiation.
